맵다 means “to be spicy.” 안 맵게 means “not spicy,” and 해 주세요 politely asks someone to make it that way.
Use this when ordering a dish that can be adjusted. It is clearer than simply saying 안 매워요, which means “It is not spicy.”
If you want just a little spice, say 조금만 맵게 해 주세요. 조금만 means “only a little.”
